Trying the New NYC Korean Gimbap Restaurant from the Nami Nori Team

Nami Nori is some of my favorite sushi in NYC, so any time they have something new, I am going to be super excited! A year or so ago, that was their bakery Postcard, but now that space has been reinvented into TBD Gimbap, a fast causal restaurant focusing on one of my favorite Korean treats!
What is Gimbap?
I think visually its easy to compare gimbap (or kimbap) to Japanese sushi, but its actually very different for the one distinct reason that makes sushi, well sushi. Instead of seasoning the rice with vinegar, gimbap rice is seasoned with sesame oil and salt, giving each bite a more nutty savory aroma. Like sushi, you can basically add anything into it, but generally you are looking at alot of veggies, and more cooked items than raw.

The Menu
So on the menu at TBD are a number of different gimbaps all filled with braised burdock, carrots, spinach, an egg omelette, and pickled daikon. Right now they have spicy pork, special ham, soy garlic tofu, carrot inferno, and the three I got: The Classic with spam, The Tuna with tuna fish and perilla leaf, and The Beef Bulgogi.
To me this is the perfect lunch! Easy to grab and eat, full of veggies and proteins, and of course delicious! They are all made to ordere here as well! I could eat this every single day for lunch, here’s hoping they come to Williamsburg next!
Dessert
Gone is Postcard Bakery, but that doesn’t mean they have gotten rid of their treats all together! They will have a rotating selection of desserts too, and the day I was there, they had a pistachio choco pie which is filled with pistachio cream, kataifi (shredded phyllo) and chiffon, and covered in chocolate! It was so light and soft!
